Their Story:

Jody and Michelle Kropf opened Red Hills Market in Dundee in early 2011. They had met years before in the Napa Valley when Jody was attending the CIA Greystone (Culinary Institute of America) and bonded over their mutual love of good food. They traveled the world together, but were eventually drawn back to Jody’s roots in Oregon. They had a dream to open a neighborhood spot in their new hometown of Dundee: a deli, a market, somewhere people could gather and meet.
Red Hills Market became exactly that, and is now an integral part of the wine country community. They are open 7 days a week and serve breakfast and lunch daily, with brunch on the weekends. They have a pizza oven, a deli, Stumptown Coffee and beer on tap. Food can be eaten in the cozy dining room or taken to go for a picnic or winery tour. The market features a great number of Oregon wines, beer and other products, from Kelly’s Jelly and Joe’s Bigfoot BBQ Sauce to Home Grown Food preserves and Briar Rose Creamery cheese.
Chef Shiloh Ficek joined the Red Hills Market team in late 2011. He had previously worked at the farm-centric Wildwood Restaurant in downtown Portland and was excited to make the move into the Willamette Valley to learn more about wine and be closer to the source of his ingredients. Over the years, Shiloh and Jody have grown the business, even extending into the community through catering and events. Since day one, they’ve had a mobile pizza oven that they can take to public and private events. Earlier in 2014, they found an old 1940 International truck in a field and Newberg’s Bu-Kai Design built them a sweet new catering rig, complete with an authentic Italian pizza oven, 3 beer taps and surround sound.
In the kitchen and at the market, Jody and Shiloh really focus on using as many local ingredients and products as they can, to promote and support other small businesses in the area. New farmers and producers will often bring their wares right into Red Hills Market to show Jody and Shiloh. The open kitchen makes it easy to interact with the guests and customers. Red Hills Market has become a hub, where locals and visitors can come shopping for pantry staples, pick up lunch, meet and connect with each other.

“Red Hills Market is a hub for the community” – Chef Shiloh Ficek
“It always blows me away, what it takes to grow food” – Chef Shiloh Ficek
