The Willamette Valley is an incredible place. There is a special energy around farming, wineries, artisan producers and the culture of food. This is where LET um EAT began and where we are constantly inspired by our friends and the Seeders, Feeders and Eaters that we meet.

The LET um EAT Takeover at Thistle Restaurant will be a celebration of summer in the Valley and members of The Collective. Emily, Fritz, Patrick and Eric of Thistle Restaurant have been so kind to let us take their beautiful space over for one night to share our own version of an “Oregon provincial” meal.

The menu highlights product from some of our friends and neighbors: produce from Minto Island Growers and Mineral Springs Ranch, olive oil from Oregon Olive Mill, stone fruit from Baird Family Orchards and honey from Bee Local’s Willamette Valley hives. And of course ingredients from the LET um EAT Farm and headquarters, just 30 miles from Thistle.

Guanciale & crispy pig ears, charred & marinated melons, chili, Oregon olive oil

Shiso-salted albacore conserva, cucumbers, blistered ground cherries, puffed wild rice

Tomato skin pasta filled with braised tomato leaves & ciccioli, cherry tomatoes, smoked cheese

Lamb, frikeh “caponata”, hazelnut & grape condimento, burnt olive

Roasted peaches, peach leaf panna cotta, Willamette Valley honey, brown butter crumble

All tickets must be purchased in advance and limited seatings are available. The LETumEAT Takeover Dinner at Thistle is $70/person. This includes a multi-course meal and a complimentary beverage. A $25 deposit is paid at time of reservation.

How will the Takeover Dinner be set up?
The Thistle Takeover Dinner has two seatings: 6:00 pm and 8:30 pm. You will be seated at a table with the rest of your party. The menu is fixed but beverage options will be available to choose from.

Is the dinner $25?
The $25 payment is a deposit that will guarantee your reservation. The Thistle Takeover dinner is $70/person and includes a multi-course meal and one complimentary beverage. The balance, plus any additional beverage purchases, will be paid at the end of your meal.

What beverage options will be available?
The Thistle Takeover dinner will have cocktails, wine & beer by the glass available for purchase.

Can my friends and I book our reservations separately and still sit together?
Sure! If you do book separately from your friends please email us ahead of time so we know to seat you together.

What is your cancellation policy?
Tickets are non-refundable within 7 days of the event date.

Do I have to bring my printed ticket to the event?
No, we will have your name on a list when you check in at the dinner.
