Jacobsen Salt Co has announced a special SALT FIRE WATER dinner series, presented by Williams Sonoma Open Kitchen. The series will take place year-round, bringing celebrated chefs from across the country to collaborate with local Portland chefs at the Jacobsen Salt Co Headquarters and event space in Southeast Portland. The six to eight course dinners “will be constrained only by the idea of the traditional and modern uses of salt throughout the four seasons: curing, preserving, seasoning and finishing” and highlight the bounty of Oregon, using ingredients from local farmers, fishermen and artisan producers.
We’re especially excited for December’s dinner with Chez Panisse chef Cal Peternell and Troy MacLarty of Bollywood Theater. Indian street food meets classic California cuisine? Troy MacLarty is actually a Chez Panisse alum, having worked at the renowned Berkeley restaurant for 4 years, after leaving his career as a biologist and going to school at the Culinary Institute of America. Troy then landed in Portland and continued with the Chez Panisse mantra of local and seasonal, developing relationships with many of the area farmers through his time at Family Supper, Lovely Hula Hands and Laurelhurst Market.
As Bollywood Theater has been such a wild ride since opening a year and a half ago, Troy unfortunately hasn’t had the opportunity to do more seasonal dishes and change the menu as often as he’d like, but has plans to take that on soon.
Chances are we’ll get a taste of what’s to come at this collaborative event with Cal. Over the course of the two nights, the two chefs are planning on using the same key ingredients, however one night will be Indian themed and the other more classic American farm-to-table, as one would expect at Chez Panisse. “I threw the idea out to Cal and was excited when he agreed to it,” says MacLarty.

Each Jacobsen Salt Co SALT FIRE WATER event will take place over the course of two evenings with one seating of 48 people per night. Tickets are available through Eventbrite for $135/person, food, beverage pairings and gratuity included.
